You can watch the video for ages, where pork ribs are cut, which have just been pulled out of the oven. Juicy, crispy, rosy, and aromatic. But what if you take and cook these yourself? Easy, you say. And in fact, ribs are more difficult to cook than, for example, barbecue. You need a special marinade, correctly selected ribs, and a method of baking. But we have found the perfect ribs recipe for you so that you can enjoy juicy, crispy, rosy, and fragrant meat without leaving your home.
We need:
- 2 kg of pork ribs;
- 2 tbsp. a spoonful of olive oil or butter;
- Salt and pepper.
For the barbecue sauce we need:
- 1 piece of chili pepper;
- 70 g ginger;
- 2-3 cloves of garlic;
- 170 ml of apple juice without sugar;
- 120 ml white wine vinegar;
- 2 tbsp of tomato paste;
- 1 tbsp of French mustard;
- 120 ml soy sauce;
- 120 g cane sugar.
* If there is no time to prepare the marinade for the ribs, you can always buy ready-made natural sauce in our stores. “Chili Mustard” and “Curry Apricot” are perfect for the ribs. Both sauces will spice up the ribs and help shape the crispiness during cooking.
Cooking method:
First, rub the ribs with oil, salt, and pepper. Let them marinate for a while. Prepare the sauce during this time.
Chop the chili peppers, but be sure to remove the seeds before doing that, as they are too hot. Next, peel the ginger root and garlic and grate them on a fine grater. In a bowl, combine pepper, garlic, ginger, juice, vinegar, tomato paste, mustard, soy sauce, and sugar over medium heat. Stir the mixture until the sugar dissolves. As soon as the mass begins to thicken, remove it from the heat. The thickening process lasts on average 10-15 minutes.
Then place the ribs in a large baking sheet or skillet, brush with the sauce you’ve cooked, and cover with foil. In the meantime, preheat the oven to 200 °C using your normal bake mode. Then set the ribs to bake. After half an hour, open the oven and pour the remaining sauce over the ribs.
In another half an hour, you can remove the foil and grease them again with the rest of the sauce. Leave them to bake for 15 minutes for the sauce to set well, then switch the oven setting to grill. This will help the meat get crispy. Leave the ribs for 5-7 minutes until they are browned and can be removed from the oven.
Once the juicy and crunchy ribs are removed, you can pour over the sauce, if any, and let them sit for a few more minutes. Start trying the ribs as soon as you can separate them from each other with your hands.

To make the ribs come out juicy, not only the method of preparation is important, but also the quality of the meat itself. Select the ribs on the breast. This variety has more veins, and therefore the meat does not dry out during frying. In addition, the shape of such ribs is convenient for cooking, since it has a flat shape, which is convenient to put on a baking sheet.
